RECIPE OF THE MONTH

This month we’re sharing a simple Lemon Blueberry Loaf recipe that’s perfect for spring gatherings, coffee breaks or enjoying out on the patio during the warmer weather.

Ingredients

1½ cups flour
1 tsp baking powder
½ tsp salt
1 cup sugar
2 eggs
½ cup milk
⅓ cup oil
Juice of 1 lemon
1 cup blueberries

Instructions

Preheat oven to 350°F. Mix flour, baking powder and salt in one bowl. In another bowl whisk sugar, eggs, milk, oil and lemon juice. Combine wet and dry ingredients and gently fold in blueberries. Pour into a greased loaf pan and bake for 50–60 minutes until golden brown.
